Ingredients
- 1 tablespoon extra-virgin olive oil (or 1/4 cup)
- boneless skinless breasts of chicken, 1 pound
- kosher salt
- Freshly ground black pepper
- 1/4 c. + 2 tsp. Frank’s buffalo sauce
- 2 cloves of minced garlic
- Lemon juice from a single lemon
- 2 egg yolks, pasteurized and cooled
- a teaspoon of Dijon mustard
- Parmesan cheese, plus a little extra for decoration: 14 cup
- 1 big head of romaine lettuce, chopped

Directions
- To begin, heat the oil in a big pan over medium-high heat.
- Cook the chicken until it is no longer pink on both sides, approximately 6 minutes total.
- Use sea salt and freshly ground pepper for seasoning.
- Toss the buffalo sauce into the mixture and mix until it’s coated.
- Mix the garlic, 1/2 tsp. salt, lemon juice, egg yolks, mustard, and 1 tbsp. Buffalo sauce in a medium bowl and whisk well. Then, add the Parmesan cheese and mix well.
