With a wonderful variation on the classic Caesar salad, this dish is sure to please. In fact, in place of lettuce, try green beans. This green bean Caesar salad is a delicious variation to the standard Caesar Salad and is a wonderful side dish to serve at your holiday gathering.

When it comes to autumn and winter salads, a Caesar salad isn’t something that springs to mind right away, but it should be. However, by simply substituting seasonal fresh green beans for the romaine lettuce, it is transformed into a salad that is suitable for serving throughout the colder months of the year.

Ingredients for Green Bean Caesar Salad

  • Four ounces crusty white bread, cut into 1/2-inch cubes (about 2 cups)
  • 1/4 cup plus one tablespoon extra-virgin olive oil
  • Kosher salt and freshly ground pepper
  • Two pounds green beans, trimmed
  • Four anchovy fillets (packed in oil)
  • Two tablespoons red wine vinegar
  • One tablespoon fresh lemon juice
  • One clove garlic, roughly chopped
  • Two tablespoons grated parmesan cheese, plus more for topping
  • 1 1/2 teaspoons dijon mustard
  • Four cups baby kale
  • Two tablespoons salted roasted pepitas

Directions for Green Bean Caesar Salad

1- 400 degrees Fahrenheit should be set for the oven. Add 1 tbsp olive oil, salt, and pepper to the bread cubes before tossing them on a baking sheet. Then, r Raise the temperature to 450°F and roast for 15 to 20 minutes, stirring once halfway through.

2- A big pot of salted water should be heating up in the meanwhile. After that, fill a large mixing basin halfway with cold water. In a pot of boiling water, add the green beans and simmer for 4 to 6 minutes, until they are brilliant green and just soft. Cool fully by draining and placing in cold water.  Pat dry on a baking sheet lined with paper towels after a second draining.

3- You’ll need to make the dressing. Toss the anchovies and other ingredients into a blender and process until smooth. Then, scrape down the edges with a rubber spatula. Slowly drip the remaining 14 cups of olive oil into the machine while it is running and mix until blended. Sea salt and freshly ground pepper are used for seasoning.

4- In a large bowl, mix together the green beans, kale, and half of the croutons and pepitas. Toss in the dressing and season with salt and pepper after adding it. Spread out on top of the remaining croutons and sprinkle with extra parmesan cheese.
