- Four ounces crusty white bread, cut into 1/2-inch cubes (about 2 cups)
- 1/4 cup plus one tablespoon extra-virgin olive oil
- Kosher salt and freshly ground pepper
- Two pounds green beans, trimmed
- Four anchovy fillets (packed in oil)
- Two tablespoons red wine vinegar
- One tablespoon fresh lemon juice
- One clove garlic, roughly chopped
- Two tablespoons grated parmesan cheese, plus more for topping
- 1 1/2 teaspoons dijon mustard
- Four cups baby kale
- Two tablespoons salted roasted pepitas

Directions for Green Bean Caesar Salad
1- 400 degrees Fahrenheit should be set for the oven. Add 1 tbsp olive oil, salt, and pepper to the bread cubes before tossing them on a baking sheet. Then, r Raise the temperature to 450°F and roast for 15 to 20 minutes, stirring once halfway through.
